History and Origin
Their name comes from the Arabic "brioua" which means small envelope; or pastry. Their origin dates back several centuries, probably to the Andalusian period, when culinary exchanges between Muslim Spain and the Maghreb enriched Moroccan traditions. The briouate or briwate is a pastry turnover, usually triangular in shape, of Ottoman origin. The name briouate is restricted to Morocco.
Description
Prepared with toasted almonds, sugar, orange blossom water, a touch of cinnamon, all wrapped in brick pastry (warqa in Morocco), and coated in honey. With almonds, orange blossom and/or pistachio.
