History and Origin

The pancake (literally "pan cake"), an Anglo-Saxon emblem, actually originated with the Greeks. The English word pancake appeared in the 15th century, and this form of crepe was definitively adopted by Americans in the 19th century. Thomas Jefferson, the third president of the United States and a great pancake enthusiast, had his favorite cook, James Hemings, send the recipe from his native Virginia to the White House. Born enslaved, Hemings had accompanied Jefferson to France, where he trained with the greatest chefs and mastered the art of French cuisine.
