History and Origin

The ancestor of gingerbread is honey bread. This was known to the ancient Egyptians and Greeks (around 200 AD), then to the Romans. This honey bread was made from different flours and honey, without spices. During the Crusades in the 12th and 13th centuries, Europeans in turn discovered this honey bread and Oriental spices: they then brought the recipe back to Germany and France where it spread through monastic networks, particularly through Cistercian monks. This artisanal production, which used glazed earthenware or carved wooden molds, became industrialized in the 19th century and restructured at the end of the 20th century.

Also, in the 13th century in the city of Toruń in Poland, gingerbread production began. Toruń gingerbread (pierniki toruńskie/ piernik toruński) soon became famous and popular throughout the country and also in other European countries and was then introduced to Sweden by German immigrants. In Poland, gingerbread remains one of the traditional national cakes today. Toruń has a gingerbread museum, and the city is often nicknamed "the city of gingerbread."
