History and origin

In 1800, a bread baked in a tin mold was invented in England, which is the origin of sandwich bread. This type of bread was industrialized and sold on a large scale in the United States by the Wonder Bread company in the 1930s, particularly after the invention of sliced bread by Otto Frederick Rohwedder.

Description

Shokupan is the quintessential Japanese sandwich bread! This is where the Japanese fantasy for soft textures is fully expressed. Its slices are also used to make our Sandos. Our Shokupan is made at night by our artisan baker in the shop, using a Japanese starter called Yudane. It is thanks to this specific starter and baking in a closed mold that it achieves its characteristic airy texture and its slightly sweet taste. Just like cheesecake or brioche, Shokupan is branded with an iron when it comes out of the oven.

Ingredients

Wheat flour (Gluten), water, sugar, butter, pasteurized whole milk (lactose), milk powder (contains Soy), salt, fresh yeast (Saccharomyces cerevisiae).
